Greetings,
I'm looking at cutting the rear most part of the frame off just behind the hinged bracket cross section. To those engineers etc out there, do I need to weld a another cross section piece in or can I just use an adapted hing bracket, that is bolted across?

Not sure why you'd cut it off, but you could. The engineer in me says to shorted the side tubes and weld the rear hoop back on with shorter "legs". I just looked at from pictures on eBay, you lose the mounts for the tail piece, and the side bag mounts.

What are you trying to accomplish?

The reason I want to take the rear most section off is that I'll turning it into more of a cafe racer style. Thank you for your advice.

It's been done a "thousand" times before and I've never heard of anyone having issues. The main strength of the frame comes from the triangle part for the transmission as well as the engine being integral to the frame assembly in the front.
