Getting up in years and cant ride as confidently anymore and have a crashed K1100 LT (1993). Was considering using the engine, frame, and drive train as a donor for a rear engine reverse trike build.

Wondering what electronic gizmos are easily deleted that wont cause me headaches to eliminate. Things like side stand sensors, clutch lever sensors (if any), ABS to the rear and the like.

Can I eliminate some of those things without causing a no-start situation?

The ABS system is more or less separate so it can be removed without impacting anything else.

For the side stand switch you can just short the two wires to each other at the connector.

The start button gets power from two sources via black/green wires at the right combo switch connector:

1 - From the instrument cluster when the bike is in neutral and the green N lamp is on.

2 - From the clutch switch when the clutch lever is pulled in.

If your end product has a pedal activated clutch then you could just wire a switch to that.
