Most fast food & gas station food is high carb.
I'm not a huge fan of store bought jerky because my home made stuff is awesome.
Due to an unusual reaction to artificial sweeteners (will post more later on this) I am VERY limited on low-card, no-sugar foods and drinks.
I have had no problems with Stevia/Truvia/Pruvia so at least that's a good option.
Of course nuts are good.
I'm not on insulin.
I've lost 15 lbs. since January.
Currently glucose checks AC & HS & 2 hours after eating.
I log all my data points in an App called On Track.
I'm struggling with understanding glycemic index.
I could use all the advice anyone can offer as it relates to this new factor and Long Distance riding

But this could turn into a positive if it makes you keep a sharp eye on what you eat.

GI is a deceptive measure Gwen. See if you can get hold of Patrick Holford's GL Diet book. Glycaemic Loading will be a much better way to balance levels. For example in GI terms Carrots and Chocolate are the same, but vastly different in GL terms.
