How to make kick ass prime rib:
1) Leave it out all day to come up to room temp.
2) Remove the strings and get any blood off of it with paper towels.
3) Rub it down with extra virgin olive oil.
4) Rub it down with fresh black pepper and kosher salt.
5) Tie it back to the rib rack.
6) Cook it elevated. Start by cooking it at 500 degrees for 15-20 minutes to crisp the outside and seal in the juices.
7) Then drop the temperature to 325 and wait until the middle gets to 125 or so.
8 ) Wrap it in foil and let it sit for 20 minutes while it finishes cooking and the juices set.
9) Serve with a nice 3 or 4 year old Napa merlot. _________________ 93 LT (x2)
