So this year we are going all out on the deep fried turkey!
Right now I'm making a sweet, savory, salty brine to soak it in for 24 hours.

Below is the recipe and instructions.

Ingredients
2 gallons water
16 ounces kosher salt
1 cup brown sugar
24 ounces maple syrup
24 ounces honey
12 bay leaves
1/2 ounce ground cloves
1/2 ounce ginger
4 ounces ground peppercorns
2 oranges quartered
2 lemons quartered
6 thyme sprigs
4 rosemary sprigs

Instructions
Pour one gallon of water into the stockpot and add the cloves, ginger, peppercorns, bay leaves, salt and brown sugar and bring to a boil. Reduce the heat to a simmer, then add the honey and maple syrup and stir the pot;.

Turn off the heat and let cool. After cooling, pour the mixture into the large bucket, then add the quartered Oranges and Lemons, the sprigs of Thyme and Rosemary, then add the other gallon of water.

Give the pot another stir, then add the turkey (butt first).

Then, either put the lid on the bucket or close off the top by wrapping the plastic wrap around it. Then, refrigerate or, if there's no room in the refrigerator, assuming that it's cool enough outside, leave the bird to brine on your patio. Brine the bird anywhere from 6 to 24 hours.

Really fresh Rosemary.

All juiced up.

The brine cooling.

My injection recipe

1/2 cup chicken broth
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon finely ground pepper
3 ounces garlic oil
4 tablespoons Louisiana Hot Sauce
1 teaspoon cayenne
3 tablespoons Worcestershire sauce

We deep fried one last year w/o any prep and it was ok.

So this year I Googled the process and found these recipes which I modified to taste.

The meat absorbs 90% of the injected liquid so it's not like pouring water into 325 degree oil. This is why it's injected today to give it time to absorb.

The trick is to use a bird around 10-14lbs and cook for 3 min. a pound or to 170 degrees.

The finished brine...and the bird is double bagged with the air out and in the fridge.

I hand squished each wedge before dropping it in.

Looks GREAT!!

Yesterday we were discussing nitrous injection.

Today it's turkey injection Laughing

Only on K11OG and only our Gwen. EXCELLENT!

Nice post.

Now how do we do this at HM IV? (the turkey, not the NOS)

Thank you dear Very Happy
That's an interestion thought. *rubs chin*

As cool as the idea is, have you seen the SIZE of the fryer set-up? Shocked
Then there's the gallons of peanut oil (which could be bought there)

Ok, I'll assess my ability to lash down the fryer on the K11.

That alone would be worthless without pics.

Think of a couple of deep fry pots- bought or shipped there.

Wood fire (those outdoor fire pits) under the pots to bring the oil up to temperature.

There you go. I could start a search on how to get 2 (3?) deep fry pots plus the oil delivered to or bought in Marion.

Just a prelim look- no commitment, OK?

Ok.
I suggest this: contact the resturant we had bearkfast at The Apple Tree, and see if they would be willing to recieve the goods.

Or better yet, see if the Park Office would be willing to do this for us.

Count me in for one pot and set up.

It's hard to buy peanut oil in bulk outside the holidays, but large jugs can be found at any grocery store.

OMG, look what you've started. Very Happy

Gwen, do you know how to get the correct amount of oil in the pot? Excuse me if this is a "duh" question.

No worries.

Yeap.

Put the bird in, add water until it covers the bird by 2 inches.
Remove bird and mark the level.
Dry the pot and add the oil to the marked level.
Be sure to dry off ALL the water inside and out.

EDIT to fix directions, thanks dear.

Um shouldn't you mark the level after you take the bird out? Otherwise it will overflow!

Maybe ask the restaurant if they would be willing to rent/loan such a pot???

Just a thought (a lonely one, but a thought nonetheless)

whyoldbill,

Ohio, huh? Just an easy brick trip to HM IV. You should be there next May.

How about it, eh?

Then you could eat some deep fried turkey for yourself.

John
