Is this wider than the stock k1100LT but will work on it? I am very interested.

Yes, and it's a worthwhile upgrade too because it allows you to run front and rear Michelin Pilot Road 2 tires. That's how I have my K1100LT set up.

Does it raise the seat height? Make the gearing taller? Change the accuracy of the speedo? Positively affect handling?

Not a material difference. The RS tire is about 1% smaller in radius and circumference. The bike will ride about 1/8" lower - not noticeable.
The bigger difference is handling comes from switching from bias ply to radial.
