How easy, or difficult it would be to convert a K1100RS into an LT, and vice versa.

You need to change the whole fairing, handlebar, cables and brake lines, wheels are also different but you can have a LT with RS wheels.

Not hard but getting all the pieces can be expensive.

Yes of course.
I took that as read.
I just wondered if the LT fairing plastics can be bolted on to the RS subframe

On the bike, yes. The naked bike is the same.
