Warning! This chowder is REALLY really high in fat. :eek1


Bacon Chicken Corn Chowder

Preparation.
Can be made in a large, deep skillet or Dutch oven.

Bacon:
Fry 1 package until crispy, drain and hand crumble.
Set aside.

Chicken thighs:
6 thighs, de-bone, skin and cut up meat into small pieces.
Set aside.

Vegetables:
Dice 3 potatoes, 2 carrots, 2 celery stalks, and 1 medium onion.

Other ingredients:
2-3 cups Monterey cheese
2 cups half and half
3-5 tablespoons flour
1 cup frozen corn
4 tablespoons chopped garlic
Salt and pepper to taste

Cooking:
After frying bacon, save the bacon grease.
Fry chicken in this grease with garlic until medium browned.
Remove.

Next, fry all diced vegetables and corn in bacon grease until mostly done, stirring often.

Add flour until well incorporated. Stir frequently.
Add 1/4 cup water.
Add half and half slowly, it will make gravy with the flour. Stir frequently.
Add bacon and chicken. Stir.
Add Monterey cheese.
Add 12-16 oz. chicken stock

Simmer very low for 30 minutes stirring often.
Thicken with starch.

1/2 regular milk, 1/2 cream. So you could make your own.

Now seriously, there must be different measures. Here, 153 is clearly under the average. If it's too high in the US, then you must take care. Wink

Doc called it "borderline high", as in, cut the fat intake a bit and get off your ass. Nothing to freak out over, but I'm trying to become more conscious of what I put down my throat. And that chowder just looks sooooooo good, but it's sooooooo bad.

You only live once, right?
